CDC study: 90% of Americans don't eat enough vegetables

So how do we combat this lack of nutrition?

This CDC Study shows that 1 in 10 Americans do not eat enough fruits and vegetables to sustain healthy bodies. We reach for processed foods to fill the void which can lead to chronic diseases like obesity and diabetes. The problem may lie in the fact that the recommended amount of vegetables the average adult should eat is 2-3 cups of veggies a day. That's a lot, even for those of us who love them! 


So how do we, as health conscious consumers , fill that gap? Well, another study done by the National Institute of Health suggests that microgreens are a great alternative. These diminutive plants are power packed with 25-40 times the nutrient density of the mature versions. This would allow us to eat smaller amounts while still achieving the recommended daily  allowances of nutrients.
